Respect for nature means, above all, the choice of a place like Tenuta Novare, the true soul of our Amarone della Valpolicella Classico. It means respect for our grapes through a totally natural method of partial drying in fruit-drying lofts. We have always been convinced that this is the only way to obtain a great wine, one in which elegance always prevails over power. Respect for our wines means allowing them to develop all their potential quality. The must is entrusted to slow fermentation in cement tanks, sometimes for more than 50 days. This courageous, risky choice, is taken in the conviction that it is the only way to attain the high content of superior alcohol and glycerin that guarantees rich and elegant aromas. Maturation, moreover, always lasts at least six years in Slavonian oak barrels and another 12 months in the bottle. This slow but precious pathway permits our Amarone della Valpolicella Classico to develop its grand, elegant aromatic patrimony, those fundamental qualities, that extraordinary longevity.
